Bilangan HLB ditentukan dengan metode Davies yang menghitung bilangan HLB dari bilangan HLB komponen-komponennya. Penelitian menunjukkan bahwa fosfolipida dalam buah kelapa adalah fosfatidiletanolamin dan fosfatidilserin dengan komponen asam lemaknya adalah asam palmitat, miristat, laurat, kaprilat dan kaprat. Dari perhitungan diperoleh bilangan HLB fosfatidiletanolamin adalah adalah antara 11,32-17,02 dan fosfatidilserin antara 13,42- 19,12.
