Tujuan penelitian ini adalah untuk mengetahui karakteristik gelatin dari berbagai jenis kulit ikan dan mengetahui pengaruh penambahan gelatin kulit ikan tersebut terhadap mutu produk kekian . Metode penelitian yang digunakan adalah experimental laboratories menggunakan Rancangan Acak Lengkap (RAL). Perlakuan pada penelitian adalah penambahan gelatin kulit ikan yang berbeda yaitu ikan patin, ikan cobia, dan ikan payus, masing-masing dengan tiga kali pengulangan. Parameter yang diamati adalah gel strength , kadar air, kadar protein, kadar lemak, hedonik, uji gigit, uji lipat, dan uji derajat putih. Data parametrik dianalisis menggunakan ANOVA dan uji lanjut Beda Nyata Jujur, sedangkan data non-parametrik dianalisis menggunakan Kruskall-Wallis dan uji lanjut Mann-Whitney Test . Hasil penelitian menunjukkan bahwa kekian dengan penambahan gelatin kulit ikan patin, cobia, dan payus mempunyai pengaruh yang berbeda nyata (P<0,05) terhadap kualitas kekuatan gel, kadar air, kadar protein, kadar lemak, hedonik (tekstur dan warna), uji gigit, uji lipat dan uji derajat putih. Formulasi kekian terbaik pada penelitian ini dengan penambahan gelatin kulit ikan cobia dinilai dari gel strength (1886,14 g.cm); nilai kadar air (51,75 %); nilai kadar protein (25,91%); nilai kadar lemak (9,21%); nilai hedonik (7,46<µ<7,73); nilai uji gigit (8,36); nilai uji lipat (4,46) dan nilai derajat putih (69,51). “ Kekian” is one of the fisheries diversification products. Good kekian has a chewy texture and is easy to chew, so it needs a gelling agent to make the gel remain good. Gelatine has the properties of a stabilizer and gel formation, so it has the ability to increase gel strength and improve texture from kekian. The purpose of this research is to know the characteristics of gelatine from various types of fish skin and determaine the effect gelatine addition of fish skin on the quality of product. The research method used was experimental laboratories using a Completely Randomized Design (CRD). The treatments were addition of different skin fish gelatine, namely catfish, cobia fish, and payus fish, each treatment was repeated in three replications. The parameters observed were gel strength, water content, protein content, fat content, hedonic, bite test, folding test, and degree of whiteness. Parametric data were analyzed using ANOVA and Honestly Significant Difference, while non-parametric data were analyzed using Kruskall-Wallis and Mann-Whitney test. The results showed that the kekian with the addition of fish skin gelatine had a significantly different effect (P<0.05) on the quality of gel strength, moisture content, protein content, fat content, hedonic (texture and color), bite test, folding test and degree of whiteness.
