Abstract

Penelitian ini bertujuan untuk mengisolasi dan mengidentifikasi zat pengemulsi yang terdapat dalam sistem emulsi santan kelapa. Isolasi phospholipida dilakukan dengan metode ekstraksi solven menggunakan campuran heksana-isopropanol (3:2) pada T = 40°C. Ekstrak yang diperoleh lalu diuji dengan TLC. Identifikasi komponen-komponen zat pengemulsi, phospholipida (phosphogliserida), dilakukan dengan memisahkan komponen-komponen asam lemaknya dengan cara penyabunan dengan NaOH metanolik 0,5 M. Setelah itu asam-asam lemak yang diperoleh diesterifikasi sehingga terbentuk metil esternya. Senyawa metil ester dari asam lemak ini yang kemudian diidentifikasi dengan GC-MS. Dari hasil analisa dapat disimpulkan bahwa zat pengemulsi pada santan kelapa kemungkinan terdiri dari lebih dari satu senyawa phospholipida yang bersifat amphiphilik. Senyawa tersebut pada bagian polarnya memiliki gugus amina dan pada bagian non polarnya (R₁ dan R₂) merupakan residu asam lemak:asam kaprilat (oktanoat, C₈), asam kaprat (dekanoat, C₁₀), asam laurat (dodekanoat, C₁₂), asam miristat (tetradekanoat, C₁₄), dan asam palmitat (heksadekanoat, C₁₆)
